EU-certified harvest center

At Leverenzhof, we harvest our salmon trouts on site. Having an on-site harvesting center provides the clear advantage of superior quality fish unmarred by the stress caused by long transportation distances and wait times and less humane harvesting practices.

Before harvesting, our salmon trouts are sobered, handled and hold for 8 days. Afterwards we take them gently out of the pond by using a vacuum pump, weight them, numb them with CO2, and harvest them by gill slice.
The harvesting center is EU-certified and fulfills the highest requirements on hygiene standards. Our employees are regularly trained to be fully compliant with food processing regulations. We also have independent audits conducted regularly to ensure that our processes and harvesting centers maintain the highest standards.
